Healthy brownie (gluten & sugar free)

Hang on. Healthy brownie? Why would someone want to eat healthy brownie?

Because this kidney bean brownie does not taste like healthy brownie. Here are few more advantages: it is sugar free, gluten free, tastes delicious and you can definitely fool your kids with this.

Me personally (Zuzana) when I bake something healthy or with unusual ingredients I never tell or show to my children or husband.

First, I let them to try it and then I am waiting for the feedback. As everyone knows, we also eat with our eyes.Kidney beans are maybe not that appealing, but they can be a hidden ingredient in delicious brownie. Once the recipe passed the test, it’s good to go on the website.

Many ingredients which we use every day in the kitchen can be replaced with alternatives. Cake can be delicious even without flour or sugar. We can still eat tasty without feeling guilty.

Ingredients

200g red kidney beans from the can

120g dark chocolate (you can also mix 80g dark chocolate and 40g milk chocolate)

2 eggs (for vegan version you can use 1 big ripe banana or 100g apple sauce)

100ml almond milk (or rice, coconut)

2 teaspoons of baking powder

2 tablespoons of honey or maple sirup, you can also add 1 extra spoon, so the brownie is sweeter

1 handful of chocolate chips or raisins (if you want to keep brownie light)

Directions

 

1. Melt the chocolate in bain marie. Put aside and let cool.

2. In a blender combine the rinsed beans (without water), eggs and milk. Blend well.

3. Add chocolate and mix well.

4. Add the baking powder.

5. Line the tray with baking paper and spread the batter. Sprinkle over chocolate chips.

Bake 35 mins on 180 degrees (oven on hot fan). Take out of the oven after 30 minutes to check if brownie is baked. Do the test with a toothpick. Baking time depends on the size of a baking tray.

Our tray is the size: 16x16 cm

If your tray is bigger, you will need less time for baking because your brownie will be thinner.
